Healthy Cashew Butter Veggie Curry with Chicken

If you follow me on social media, you will know that after last week’s absolutely amazing brownies, I have decided to get back on track and start eating healthier. (For the most part anyway, you have to treat yourself occasionally!) I have had some pretty abysmal eating habits in the past but I know that it isn’t good for me! I want to try to pay more attention to what goes into my body – and ditch all the unhealthy crap! This means that you are going to be seeing a few more healthy recipes in this neck of the woods. This week I decided to make a delicious chicken and cashew butter curry with chickpeas and veggies. healthy curry

Curry Ingredients:

-2 small chicken breasts (These are optional, so if you don’t eat meat – leave them out.)

-1 bell pepper

-1/2 cup cashew butter (I used the Vivapura Cashew Butter*)

– 1 1/2 cups coconut milk

-1 onion

-1 clove of garlic

-2 Tbls. curry paste (This can be as spicy as you prefer!)

-2 Tbls. olive oil

-1 Tbls. tahini

-2 Tbls. agave nectar

-1 small bell pepper

-1 small yellow squash

-1 small zucchini

-1 cup rice

-2 cups water

-1 cup chicken broth (Alternate – 1 c. water and a bullion cube)vivapura curryPlace the rice and water into a small saucepan. Once it come to a boil stir and reduce heat. Cover and simmer for 20 minutes. Heat the olive oil in a large pot. Chop onions and garlic and add them to the oil. Soften. Add chicken broth, simmer and reduce.cashew butter curry chickpea recipeIn a large bowl combine agave, coconut milk, curry paste, and cashew butter. Stir until smooth then add into broth mixture. Rinse chickpeas and mash. Add chickpeas and tahini to curry mixture. curryeasy healthy recipesChop up your chicken in strips or cubes then start to cook in a separate pan. Once meat is cooked add a pinch of salt and your squash and peppers. A relatively simple and healthy recipe that you can make at home. The beauty of this recipe is that it refrigerates well so you can pack some up for week-day lunches to avoid unhealthy choices. You can also substitute other veggies depending on what you can get fresh in your area!
